With shorter days and colder nights in the Pacific Northwest, it’s time to make sure your tomatoes get ripe so you can enjoy them in salads and in cooking. I planted my heirloom tomatoes from seeds and now I’m seeing all the amazing types of tomatoes grow and start to ripen. This reminds me of my childhood days, when almost every night we’d pull a red, juicy ripe tomato from the garden and serve it sliced with salt and pepper.

Here are five tips to guarantee tomatoes will taste amazing, and sooner than later:

1. If you already have multiple green tomatoes growing on the vine, cut the top of the plant where new shoots and flowers are starting to form. This focuses the energy on the current fruit.

2. Remove suckers every couple days. These are the small leaves that start growing in between the main branches of the tomato plant. They will literally “suck” the plant’s energy and make it challenging for your fruit to ripen.

3. Go by feel. Don’t base a tomato’s ripeness by the color. There are so many varieties of tomatoes that aren’t your classic deep red. If the tomato is plump feeling and tender then remove it from the vine. Some of my tomatoes are yellow and ripe now.

4. With cold, wet nights approaching, you should thin the leaves and branches that aren’t critical to growing the fruit. This ensures that air can circulate between the leaves and fruit and it will help prevent late blight and mold.

5. If a tomato is too heavy for the plant like the one in the top photo, then harvest it and let it ripen on your counter or better yet in a shoe box in a cool, dark room.

It’s sweet corn time. As a girl who grew up in Iowa, we always bought sweet corn from a pickup truck on the side of the road after the farmers had picked the corn that morning. So it’s only natural that I find myself buying numerous ears of corn in July and wanting to create different recipes in addition to just putting them on the grill.

I’ll never forget a surprise gift from my dad several years ago when he was visiting Seattle. When he arrived he opened an extra piece of luggage and about two dozen corn picked that day from an Iowa farm spilled out of the bag. My heart was warmed by my dad’s sincerity and we ate plump, juicy corn for days. With sweet corn being grown throughout the U.S., almost anyone can get fresh corn from their farmers market or produce store.

To successfully grill corn, prep and season it. That means you need to pull the husks back, remove all the silk (fine hairs) and spice it up by rubbing a mixture of salt, chili powder and cumin.

Try your own spice combination. Rewrap the husks around the corn and grill for 8-10 minutes on medium-high heat. I always poke the corn with my fingernail and if it pierces the soft kernel and the juices explode then it’s time to pull it from the grill.

While I may eat an ear or two for dinner, I’ll grill another one so that I can use it for a salad the next day. I’ve created this recipe that combines Seattle’s finest smoked or cooked salmon with garden ingredients that are ripe right now including arugula and cherry tomatoes. This is a hearty salad that’s perfect for one person for dinner. To see The Solo Cook assemble the salad, watch King 5’s New Day Northwest show. The recipe below is inspired by the restaurant Cowboy Ciao in Scottsdale, Arizona, where I had a memorable salad. I know once you try my salad you will be hooked on cooking extra ears of corn for this chopped salad.

Ingredients:

1/2 cup of corn or kernels from 1 grilled corn cob

1/2 cup chopped arugula

1/4 cup diced cherry tomatoes

1/4 cup chopped smoked salmon or cooked salmon

1/8 cup slivers asiago cheese

3 tablespoons pepitas

1/4 cup cooked pearl or Israeli couscous

1/4 cup mayonnaise

1/4 cup pesto (store bought if easier)

Half of shallot chopped

1/2 cup buttermilk

1/3 lemon squeezed for juice

Salt and pepper to taste

Combine mayonnaise, pesto, shallots and 1 tablespoon of lemon juice into food processor and blend thoroughly.  As food processor continues to run, add buttermilk, remaining lemon juice and salt and pepper. Refrigerate until ready to use.

To prepare salad for presentation: place each ingredient in a line such as 1/4 cup arugula, 1/4 cup corn, tomatoes, asiago, salmon, pepitas, couscous, 1/4 cup corn and 1/4 cup arugula. Drizzle dressing on top of the ingredients. When ready to serve, lightly fold dressing into the ingredients. Leftover dressing can be stored for several days. Use the remaining dressing as a dip for fresh cut vegetables.

It’s time to get dirty. Yep, I said it – get in the dirt and get dirty.

Memorial Day weekend has passed and that means it’s fair game to plant a number of vegetables, some that will give you vegetables early and others in the middle of the summer. One of my favorites is the tomato.

Since I’m from the Midwest, I’m compelled to plant tomatoes. As a child I remember eating big, beefy tomatoes every day with a pinch of salt and pepper. I also recall my mom canning those juicy, plump tomatoes for winter dishes. So my goal is to relive those memories by planting my own this year. I want you to enjoy them too.

Here are six tips for healthy tomatoes that I’ve picked up over the years and from a recent class at Swanson’s Nursery:

1. If you are limited for space, grow tomatoes in large containers on your deck or patio. If the only person enjoying the tomatoes is you, then I suggest you buy two plants that are different types.

2. Choose starters from your local nursery or store at this point, seeds won’t develop in time. Pick the sunniest and warmest spot in your yard. Tomatoes need 6-8 hours of light per day.

3. Right before planting, pinch off the lowest two levels of leaves. This will encourage a strong stalk to support the heavy tomatoes.

4. Dig a deep hole, put an inch of compost in and sprinkle some fertilizer in the hole before planting it. Cover the root and plant with soil almost up to the first leaf.

5. Plant 18 inches apart and put a cage around each plant. If plants are too close to each other, they can get diseases due to wet foliage.

6. Water consistently, making sure soil doesn’t dry out. Inconsistent watering can lead to blossom-end rot, a brown leathery spot found on the bottom of fruit.

My desire for fresh tomatoes started two months ago when I planted two types of tomato seeds indoors – heirloom tomatoes and yellow cherry tomatoes. I used old plastic egg holders to start my seeds and placed them on the sunny kitchen windowsill.

After they got two strong leaves on them, I transplanted them into a small pot for several weeks before I daringly planted them in the ground this past weekend. I’m crossing my fingers that we’ll all have a hot, sunny summer, which means great tomatoes. Look for recipes from me in two months when we all are plucking them from our gardens.

Swap fresh food from garden with neighbors and friends

I call it neighborly love – and the old adage give and you shall receive rings true in my life when it comes to food.

For me, food is about sharing an experience with those you care about and why not share your fresh vegetables, fruits and herbs with neighbors. You will reap the benefits in many ways.

These fresh picked strawberries from my neighbor Tony’s garden are best when simply prepared. Try them with balsamic vinegar or thinly sliced mint.

There’s usually a neighbor within a couple blocks of your apartment, condo or house who you’ve gotten to know or need to get to know now. People love to talk about their gardens – including me. Trade food stories and exchange fresh garden items. If you have a bumper crop of sugar snap peas, deliver them to your friends and neighbors. Like me, you’ll soon find fresh veggies like zucchini sitting on your porch.

Tony, my neighbor, is surrounded by swiss chard, peas, potatoes. strawberries and beets. He’s always willing to share food from his verdant garden.

I’ve learned so much about gardening from my neighbor Tony. In many talks over beers, I’ve gotten tips on planting my garden. Whether it’s irrigation, compost or protection from critters, Tony has shared helpful stories with me. His garden is amazing and I, for some reason, have earned a pass to enter it at any time and pillage.

You can’t possibly find the time or space to grow everything you’d like to in your garden or in pots. So find fellow food growers in your neighborhood and see if food can be shared. For example, I have one neighbor who graciously gave me fresh greens for a salad and when my potatoes are grown I’ll drop some off for her. And don’t just think of food. I’ve given fresh herbs to a friend and, in exchange, received fresh-cut flowers from her yard. Another reward is discovering new recipes by asking how your friends prepared the food. If you are feeling ambitious, form a neighborhood cooperative or exchange that’s more organized.

Carrots literally pulled from the ground like these are so sweet and earthy. Cook them with thyme and a touch of butter, but that’s only if you don’t eat them raw first.

I’ll be honest with you I’m not good at growing corn. This is an embarrassing fact, since I grew up in Iowa. It could be my soil, or that my garden doesn’t sit in a hot, sunny spot or that I’m too far from my original roots. But I’m sure my neighbor Tony will have corn this summer and yes I will pillage. And yes he will receive an ample supply of my fresh, sweet raspberries. I’d love to hear your food swapping stories and ideas.

Flat-leaf parsley is the best herb to grow and cook

What’s the No. 1 herb you should grow and have readily available as a single person? Pot and pan drum roll please… it’s flat-leaf parsley.

Parsley is the must-have herb to plant for a person with a busy lifestyle for several reasons. It’s my top pick because it’s low maintenance, can be used in multiple dishes and grows almost all year in the ground or a pot.

After chatting with friends about fresh herbs over the weekend I could tell this was a hot topic for cooks and foodies. It was like we were talking about family relatives, quickly spitting out the personality traits and quirks of each herb. Some people thought the best herb to grow and cook should be basil and another friend was adamant that rosemary was the queen of herbs. I had no idea herbs could be so…well controversial. And I love it.

While curly parsley is considered the ugly stepchild herb because of its lowly delegation as a plate garnish, its cousin – flat-leaf parsley – can complement just about any protein dish. Stay away from the meek curly parsley because of the rough mouth feel. But flat-leaf parsley, also known as Italian parsley, adds punch and dimension to a dish with strong, deep flavor.

Parsley can be sprinkling on just about anything – like roasted vegetables, broiled white fish, grilled chicken and more. Gone are the days of buying a parsley bunch at the store and later finding half of it shriveled and rotting in your frig. If you are growing it, you only pick the amount you need from the garden and none of it will go to waste. It’s really an herb that keeps on giving.

In the Pacific Northwest our climate zone allows parsley to grow nearly all year.  I’ve been able to harvest fresh parsley from my garden to add to cold winter soups and summer salads. It even remained hearty after one or two small snowstorms in Seattle.

Parsley is also a low-maintenance and a high-yielding herb. Just make sure you cut off the inedible flowers/buds. Just think of it as an herb haircut that keeps the energy of the plant focused in the leaves not the buds.

Also when harvesting parsley, use a scissor to cut the leaves from the base of the stem where they originate from the main stalk or the ground. Don’t just cut off leaves as this will prevent it from generating new growth.

Here is a recipe I created for one serving. You won’t regret making this mouth-watering steak.

Hot in the kitchen: Grilled Steak with Chimichurri (vegetarian option below)

4 to 6 oz. filet mignon of other steak

½ cup tightly packed flat-leaf parsley leaves from the garden

2 tablespoon fresh oregano

3 garlic cloves

¼ cup olive oil

1 tablespoon white balsamic vinegar

Dash of sea salt, fresh cracked black pepper and hot pepper flakes

Before preparing the chimichurri, turn the grill on to high heat and seasoning steak with salt and pepper.

For the sauce, lightly pulse fresh parsley, oregano and garlic in food processor or let your fingers do the work and finely chop the ingredients. In a small bowl combine the herbs, garlic, olive oil, vinegar, salt, pepper and pepper flakes. Taste and add more salt, pepper or red pepper flakes depending on your palate.

Brush the grill with oil, then place filet on super hot grill. Flip steak after 4 minutes. After another 4-5 minutes of cooking, remove the meat from the grill and loosely place aluminum foil over steak on a plate for several minutes for a medium rare steak.

Drizzle chimichurri on the steak of your choice.

Vegetarian option: Gently clean a Portobello mushroom and thickly cut, on a horizontal slant, one zucchini and one eggplant. Brush each with olive oil and sprinkle with sea salt. Grill over medium high heat for five minutes each side or until grill marks appear. Plate vegetables and drizzle chimichurri sauce over the top.

I chose one herb for one person, but don’t limit yourself. Plant a trio of herbs this summer if you have the space. I have several herbs growing in my garden and in pots. My runner-up herb is basil and rounding out my top three is thyme.

It’s fun to snip herbs from your garden and add them to a dish to give it a flavor boost.
